Introduction

Just over 60 calories and less than a gram of fat for a slice of bread! Just over 60 calories and less than a gram of fat for a slice of bread!
Number of Servings: 12

Ingredients

    1 cup grated zucchini
    24 packets Truvia
    1 Tbsp powdered egg
    1 Tbsp Lecithin
    1/3 cup water
    1 1/2 cup all purpose flour
    1 tsp cinnamon
    1/2 tsp baking soda
    1/2 tsp ground nutmeg
    1/4 tsp baking powder
    1/2 tsp salt

Directions

Beat together zucchini, truvia powered egg, water, and lecithin.

Combine flour, cinnamon, baking soda, nutmeg, baking powder, and 1/2 teaspoon salt. (I have used pumpkin pie spice in the past and used 1.5 tsp to completely replace nutmeg and cinnamon if I didn't have the two spices.)

Stir into zucchini mixture.

Pour into a greased loaf pan.

Bake at 350 until done for 30 to 40 minutes.

Cool on rack for 10 minutes and remove from pan.

I can usually cut 12 slices.
