    1 c. Whole Wheat Flour
    1/4 tsp White Stevia Powder
    1 tsp Baking Soda
    1/4 tsp salt
    1 1/3 c. Kefir, nonfat, plain (or substitute yogurt)
    2 Egg Whites
    2 Tbsp Flax Oil


1. Combine dry ingredients in a medium bowl. Set aside.
2. Combine wet ingredients in a small bowl. Whisk together until smooth.
3. Pour the wet ingredients into the dry ingredients. Using a wooden spoon, stir until just combined.
4. Heat skillet or griddle over moderate heat. Spray with cooking spray or brush with a little oil. Using about 1/4 cup for each pancake, pour batter on the griddle; cook for about 3 minutes or until just covered with bubbles. Flip and cook for an additional 2 minutes more or until golden.

Makes 8 pancakes using 1/4 cup of batter each.
