Number of Servings: 12


    1 lb. extra-lean ground beef
    1/2 c. rolled oats (not instant oatmeal; the long-cook type)
    1 c. diced onion
    1/2 c. diced celery
    1/2 c. diced carrots
    1/2 c. diced red or green bell pepper
    3 cloves diced garlic or 1 heaping tsp. minced garlic
    small can (about 1/2 c.) mushrooms, diced
    2 egg whites


Makes 12 muffins.

1. Heat oven to 350 degrees.
2. Chop veggies. Saute all but the mushrooms and garlic in a lightly sprayed (Pam) pan until somewhat soft.
3. Combine ground beef, oats, veggies, mushrooms, garlic, and egg whites in a bowl; stir until well mixed.
4. Spoon the mixture into a muffin tin sprayed with Pam (or veg spray). Top each muffin with 1 T. ketchup.
5. Bake for 30 minutes, or until meat thermometer reaches 160 degrees.

Makes 12 muffins.
