    1/2 lb black beans - soaked overnight and rinsed (makes about 1 lb soaked)
    1 can diced tomatoes (14.5 oz)
    1 onion, diced (1/2 lb)
    4 cloves garlic, minced
    4 cups chicken or vegetable stock
    1 Tbsp paprika
    1 Tbsp hot chili powder
    1 Tbsp mild chili powder
    1 lb carrots


soak beans overnight
put all ingredients except carrots in a pot and simmer for 2-3 hours until beans are almost the way you like them. Add carrots. Simmer for another 30 minutes

makes 6-7 - 1 cup servings
