    1 egg
    1/2 teaspoon granulated garlic (I used diced garlic from a jar)
    1/2 teaspoon pepper
    2 large chicken breasts
    3/4 to 1 cup Parmesan, grated (I actually used shredded)
    1 tablespoon canola oil
    1 tablespoon olive oil
    cayenne pepper (optional)


Pound the chicken breasts until about 1/2 inch flat. Beat the egg lightly with the garlic and pepper. Coat the chicken with the beaten egg, draining off excess. Roll the chicken in the Parmesan to coat. Let sit 10 minutes before cooking (I put it in the refrig for these 10 minutes). Heat the oils in a large skillet (non-stick pan) over medium-high heat until hot but not smoking. Add the chicken and, if desired, sprinkle a little cayenne pepper on top. Cook until browned on one side, about 2-5 minutes. Turn the chicken over and brown the other side.
