    1 cup dried red beans
    1/2 large onion, diced
    1 green bell pepper, diced
    2 small stalks celery, diced
    3 sprigs fresh thyme
    2 cloves garlic,
    1 bay leaf
    2 tsp Penzey's pork chop seasoning
    1 tbsp dried cumin powder
    1.5 tbsp chili powder
    1 quart water.


Place all ingredients except TVP into sauce pan. Bring to a low boil, reduce heat to a low and simmer, covered, for about 45 minutes to an hour. Stir regularly. Once beans are tender add TVP and cook for additional 30 minutes. Serve with rice or quinoa.
