    1 1/4 Cup - Whole Wheat Flour
    3/4 Cup - Quaker Oats
    1/2 tbsp - Cinnamon
    2 tsp - Baking Powder
    1/4 tsp - Baking Soda
    1 Cup - Banana, very ripe, mashed (about 2 bananas)
    1/4 Cup - Raisins
    1 Egg
    3/4 Cup - Frozen Apple Juice (from concentrate), thawed - DO NOT ADD WATER


Preheat oven to 400 degrees.

Combine flour, oats, cinnamon, baking powder, and baking soda in medium bowl.

Combine bananas, raisins, egg, and apple juice in separate bowl, then add to dry mixture.

Stir until just combined.

Add muffin mixture to greased muffin pan. If you're using muffin liners, make sure you spray them lightly with Pam before adding the muffin mixture to the liner, otherwise the muffins WILL stick to the liner. I learned that the hard way!

Bake for 15 minutes at 400.

Makes 12 muffins.

*Just a side note, make sure that you use the apple juice in concentrate form. If you sub apple juice with the water added, the muffins really won't be sweet at all. I also learned this the hard way.*
