Nice for a summer supper with Chive and Cheddar biscuits. Nice for a summer supper with Chive and Cheddar biscuits.

    8 large eggs
    Mayonaise, 4 tbsp
    Curry powder, 1 tsp
    Salt, dash


Put the eggs into a saucepan and cover with cold water. Bring to a low boil, cover and simmer for 12 minutes until just hard boiled. Drain and cover with cold water. When sufficiently cool, shell the eggs. Cut each egg in half lengthways, placing the yolks into a small sealable plastic bag. Put the halved whites onto a plate. Add the rest of the ingredients to the yolks, seal the bag and mush it all together. Cut a small corner at the bottom of the bag and pipe the yolk mixture into the white halves. It you want a nice presentation, dust lightly with paprika, pr black pepper, or chopped chives.
