Introduction

This is a very easy icing this is low fat and not too sweet. Because it is made with sweetened condensed milk it does not call for sugar. This is a very easy icing this is low fat and not too sweet. Because it is made with sweetened condensed milk it does not call for sugar.

Ingredients

    Unsweetened or Semisweet baking chocolate, 2 oz
    Sweetened condensed milk, can be low fat or regular. BE SURE to use sweetened condensed, NOT evaporated milk or this recipe will not work. 300 ml can or 14 oz can, depending on Canadian or US shopping, either will work. (300 ml is about 10 oz. so if using a 14 oz can you will end up with more icing)
    Vanilla Extract, .5 tsp
    pinch of salt
    1 tablespoon strong coffee

Directions

Put condensed milk and chocolate and pinch of salt in a heavy pot and cook over medium heat for about 10 minutes. Remove from heat, add coffee and vanilla, You can use water instead of the coffee, but the coffee intensifies the chocolate flavour.
Allow to cool to room temperature, stirring occasionally.When ready to iuse, if it is too thick to pour or spread, warm it just slightly in the microwave.

    I really liked the coffee flavour in the icing and I'm not a coffee drinker at all. However, I prepared this recipe accordingly and the icing turned out to be unbelievably runny! It made a horrible mess of my kitchen. - 7/2/10
