    2 Tbsp. Olive Oil
    Onion, chopped
    4 Garlic Cloves, chopped
    Salt & Pepper to taste
    2 tsp. Chili Powder
    1 Tbsp. Oregano
    2 Tbsp. Cumin
    1 Tbsp. Fennel Seed
    Ground Chicken or Turkey
    3 Tbsp. Flour
    2 cans Cannellini Beans, drained and rinsed
    1 1/2 cups frozen corn
    1/4 red pepper flakes (optional)
    Swiss Chard, several leaves chopped
    4 cups low sodium chicken broth
    Flat Leaf Parsley to garnish
    Parmesan cheese to garnish


1) In a large pot, heat 1 Tbsp. olive oil and add chopped onion, garlic, and salt and pepper. Saute onions until they are softened.
2) Add chili powder, oregano, cumin, fennel seeds. Add 1 Tbsp. olive oil and ground chicken or turkey.
3) Once the meat is browned, add flour and cook for a few minutes to eliminate raw flour taste.
4) Add cannellini beans and corn, and red pepper flakes if you like spicy chili.
5) Cut the stems out of swiss chard leaves, chop the leaves, and add to pot. The swiss chard will wilt down into the chili. Add a little more salt and pepper.
6) Add chicken broth and let chili simmer for about 1 hour, or until it reaches desired thickness.
7) Turn off burner, serve chili, and then add your garnishes. Parmesan cheese and parsley are included in nutrition information, but anything else would be extra.

Makes about 6 servings.
