Introduction

Just whipped this up one evening when I was short on time & needed to make something that would cook quickly. Must say, these mini meatloaves were pretty scrumptious, and perfect way to portion control too! Ingredients

    1 lb. 93% lean ground turkey
    1 large egg
    20 Zesta/Saltine crackers, crushed
    1/2 c. shredded sharp cheddar cheese
    1/2 c. shredded zucchini
    1/2 c. chopped, fresh mushrooms
    1/3 c. chopped Vidalia onion
    1/3 c. chopped green bell pepper
    1 clove garlic, minced
    1/3 c. plus 2 tbsp. Heinz ketchup, divided
    1 tsp. salt
    1 tsp. pepper
    1/2 tbsp. steak seasoning (I use McCormick Broiled)
    Cooking Spray
    2 tbsp. yellow mustard
    1 tbsp. brown sugar
    1/2 tbsp. cider vinegar



Directions

Preheat oven to 350 degrees.

In large bowl, combine ground turkey and next 8 ingredients, along with 2 tbsp. ketchup. Using hands, combine all ingredients thoroughly.

In a separate, small bowl, combine 1/3 c. ketchup, 2 tbsp. yellow mustard, 1 tbsp. brown sugar, and 1/2 tbsp. cider vinegar.

Spray 10 cups of a 12-cup muffin pan. Divide turkey mixture evenly between the 10 cups. Spoon sauce evenly over turkey mixture.

Bake at 350 degrees for 20-25 minutes or until internal temperature of mini meatloaves reaches 170 degrees.

Makes 10 servings.
