Ingredients

    1 small apple, 4 tbsp sugar, 1/2 tsp cinnamon, 3 large eggs at room temperature, 1 cup milk at room temperature, 3/4 cup flour, 3/4 tsp vanilla extract, 2 tbsp confectioners' sugar.

Directions

Preheat oven to 400. Peel and core apple, cut into small chunks. Stir 2 tbsp sugar and 1/4 tsp cinnamon, add to apple chunks and coat evenly. Pour apple into greased pie dish and spread out evenly - set aside. In a blender combine remaining sugar and cinnamon with eggs, milk, flour and vanilla - blend for 1 minute until all ingredients are mixed and frothy. Put the dish in the oven and bake the apple chunks for 5 minutes. Pour batter evenly over apples and bake for another 25 minutes. Dust with confectioners' sugar if desired.
