Introduction

Ingredients

1 Tbsp extra virgin olive oil
16 oz can black beans (rinsed and drained)
1 c. salsa
2 tsp cumin (or more if desired)
1 c. reduced fat Mexican cheese
6 Ezekiel 4:9 Sprouted Grain Tortillas (10 inch)
Directions
Heat olive oil in large skillet on medium heat.
Add black beans, salsa, and cumin to pan. Cook for 10 minutes, stirring occasionally and mashing beans with the back of the spoon. Add water as needed if filling gets too dry.
Warm tortillas in microwave by placing between two damp paper towels and microwaving on high for 1 - 2 minutes or until warm and pliable.
Divide bean mixture and cheese evenly between the 6 tortillas. Wrap the tortillas to make a burrito.
Can be eaten warm or frozen. To freeze, wrap in wax paper and place in ziploc bag.
Makes 6 servings (1 burrito each)
