Introduction

We love this chicken dish topped with sharp cheddar and sour cream on top of basmatic rice. Number of Servings: 6

Ingredients

    4 - chicken breast, boneless, chopped
    1 tbl flour
    1 tbl cumin
    1-1/2 cups salsa (I use Salsa Lisa)
    1/2 cup pepper jam or you can substitue orange marmalade
    1 cup sliced onions
    1 cup chopped celery
    3 tbl chopped cilantro

Directions

Cut chicken breast into large chunks and add to a plastic bag with the flour and cumin. (Feel free to add any other seasonings that you like)

Saute the chicken pieces in a large skillet with olive oil until lightly brown and cooked thru.

Add the onions, celery and continue to cook for about 5 minutes.

Add the salsa and jam and cook until heated thru.

Add the cilantro when ready to serve.
