Introduction

This is a whole wheat, lower fat version of the decadent pancakes found on Bakerella's blog.
Easy to make & oh so yummy for only 86 calories each!
These freeze well. Just pop in the microwave for about 15-30 seconds & serve. Finish in the toaster for a crisper texture.
Great as is but terrific when topped with some fresh sliced strawberries!

Ingredients

    Trader Joes 100% white wheat flour, 1 cup
    Yellow Cornmeal, .5 cup
    Granulated Sugar, .25 cup
    Baking Powder, 1.25 tsp
    Arm & Hammer Baking Soda, 0.5 tsp
    Milk, nonfat, 1.5 cup
    Lemon juice, 1 tbsp
    Land O Lakes Fat Free Half & Half, 4 tbsp
    Eggbeaters, 0.25 cup
    Blueberries, frozen (unsweetened), 2 cup, unthawed
    Melted Butter, unsalted, 1.5 tbsp

Directions

Add the lemon juice to the milk. Stir gently & let 'sour' into a home version of buttermilk (or use fat free buttermilk if you have it!)
Whisk together flour, cornmeal, sugar, baking powder and soda in a large bowl. Set aside.
Whisk together buttermilk, milk, butter and egg in medium bowl.
Add milk mixture to dry ingredients and whisk together just until combined.
Toss blueberries in a small bowl with 2 tsp sugar.
Heat a griddle over medium heat. Spray surface of griddle to keep pancakes from sticking. Repeat as necessary throughout process.
Pour batter on griddle 1/4 cup at a time.
Add some of the sugared blueberries to each pancake.
Cook for about 3-4 minutes.
Flip and cook the other side for about 2 minutes.
Makes 16 pancakes
