Ingredients

    1/4 cup sugar
    1/2 cup shortening
    2 eggs
    1 cup molasses
    2 cups flour
    1/2 tsp salt
    1/4 tsp ground cloves
    1/4 tsp nutmeg
    2 tsp ground ginger
    2 tsp baking soda
    1 cup boiling water

Directions

Preheat oven to 350 degrees F Grease the pan.

In a large bowl, beat sugar and shortening until light and fluffy. Beat in the eggs, one at a time very well after each addition. Then beat in the molasses.

Sift together the flour, salt, spices and stir into batter.

Now, stir the baking soda into the boiling water then stir into the batter. The mixture will be thin. Pour all ingredients into a well greased 10 x 14 in pan or 11 x 16 in pan.

Bake 30-35 minutes or until done - test with a toothpick for doneness. Serve with a dollop of whipped cream or cool whip not included in the nutritional info. Or you can use a penuche frosting since the cake isn't super sweet.

Enjoyed this -- gbread is one of my favorites! Made a few small changes - Splenda and unbl. flour. Didn't have exact pan size but it worked. Very sweet! - 11/17/16
