    .25 block extra firm tofu
    .25 large onions
    .5 cup chopped bell pepper
    2 tbsp Herdez Salsa Verde
    .5 tbsp Cumin
    .5 tsp chili powder
    1 tsp garlic powder
    1 tsp oregano, ground
    1 tsp black pepper
    dash of salt

    .5 serving "Spicy Cilantro Hummus" (about 2 tbsp: check out the recipe on SparkRecipes)
    4 Whole Wheat Rice Cakes


In a non-stick pan simmer tofu, chopped onion, and green pepper in spices and salsa verde for about 10 minutes (so tofu can soak up the flavor. I break up the tofu with a spatula when I put it in so it looks more like ground meat.
Spread about .5 tbsp of hummus on each of 4 whole wheat rice cakes, then top each cake with a quarter of the tofu/veggies. Eat with your hands and pretend its a fiesta.
Makes 2 servings (2 rice cakes each).
