    1/2 cup uncooked wild rice
    1/2 cup uncooked brown rice
    1 tsp. fresh tarragon or 1/2 tsp. dried
    2 tsp. extra virgin olive oil
    1/2 med yellow onion
    4 oz. mushrooms, sliced thinly
    1/4 cup blanched almonds
    2 Cornish Hens
    1 cup low sodium chicken broth
    salt and pepper to taste


Bring 3 cups of water to a boil. Add both rices and the tarragon. Boil, reduce heat, and then cover to simmer for 45 minutes. Set aside. While the rice simmers, heat oil in a pan over medium heat. Add onion and saute until translucent. Increase to high heat and add the mushrooms and almonds. Saute stirring constantly until the almonds are golden. Combine mix with cooled rice. Preheat oven to 375. Rinse hens and trim off the excess fat. Stuff with the rice mixture. Place hens on a rack in a roasting pan. Roast, basting with the chicken broth every 15 minutes until done (75 minutes, approx.). Cut each chicken in half lengthwise. Divide the stuffing between 4 plates. Place 1/2 of a hen on each. Heat the pan juices and pour over the hens.
