    2 1/2 cups all purpose flour
    3/4 cup sugar
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1/2 cup butter
    1 cup plain yogurt
    2 eggs, lightly beaten
    1 tbsp orange rind
    1 1/2 cups fresh or frozen blueberries


Preheat oven to 400 F (200 C) and grease 12 cup muffin tin. In a large bowl mix together dry ingredients. Cut in butter until mixture resembles fine crumbs. In a small bowl combine yogurt, eggs and orange rind. Add wet to dry and stir until just mixed. Gently fold in blueberries. Distribute into muffin tin. Bake for 20 - 25 minutes. Makes 12 large muffins.
