Introduction

A quick and tasty dinner. You can substitute caned mushrooms for fresh, low sodium chicken broth for regular and brown rice instead of white. It all works. But the calories wil be lower. Ingredients

    1 pound boneless skinless chicken breasts cut into strips.
    1/3 cup corn starch
    1/4 cup vegetable oil
    1/2 tsp tarragon and thyme
    1/4 tsp pepper
    1 cup (or more) sliced scallions
    3/4 cup Sherry cooking wine
    1 cup mushroons canned or fresh chopped up.
    3 tomatoes cut into eighths
    3-4 cups hot cooked rice

Directions

Dredge chicken in corn starch. In large skillet, brown coated chicken in oil. Stir in seasonings and scallions. Cook 2 minutes longer. Add broth and sherry cooking wine. Cover. Simmer 10 minutes. Gently stir in mushrooms and tomatoes. Cover. Simmer 10 minutes longer.
Serve over hot rice.
Sauce may be served separately.
Makes 6-8 servings.
