    3 cups Quinoa
    1 T. oil
    3 cups finely chopped onion
    6 garlic cloves, minced
    1/2 cup chopped green chiles
    4-1/2 cups chicken broth
    2/3 cup pepitas, toasted
    2-1/4 cups chopped fresh cilantro
    1-1/2 cups chopped scallions
    1/4 cup lemon juice
    3/4 tsp. salt


Toast quinoa in a large dry skillet over medium heaat, stirring often, until it becomes aromatic, 3-5 minutes. Transfer to a fine sieve and rinse thoroughly.
Heat oil in a large kettle over medium heat. Add onion and cook, stirring often, until softened. Add garlic and chiles; cook, stirring , for 30 seconds. Add the quinoa and broth; bring to a simmer. Reduce heat to maintain a gentle simmer, cover and cook until the quinoa is tender and most of the liquid has been absorbed, 20 to 25 minutes. Add pepitas, cilantro, scallions, lemon juice and salt to the quinoa; mix gently and fluff with a fork. Makes 11 cups.
