A really quick and easy eggplant parmesan recipe. A really quick and easy eggplant parmesan recipe.
Number of Servings: 4


    1 eggplant, peeled and sliced
    1/4 cup Progresso Italian-Style bread crumbs
    2 cups tomato sauce
    1 8-oz package Mozerella cheese
    2 medium eggs


Set oven to 350*F.

Peel and slice eggplant. Whisk eggs in a bowl until thoroughly beaten. Dip pieces of eggplant into egg, coating well. Coat with bread crumbs and place on a baking sheet. Bake eggplant in 350* oven for 5 minutes on each side. Coat the bottom of a 13x9 inch casserole dish with a layer of tomato sauce. Layer eggplant on top, cover with cheese. Repeat until all ingredients are used, ending with a coat of cheese. Bake for 25-35 minutes.
