    2 tble olive oil
    1 red onion - diced
    1 yellow bell pepper
    1 yellow squash diced
    2 small cans sliced button mushrooms
    8 oz fresh white mushroom sliced
    4 big cloves garlic
    1 cup diced frsh roma tomato
    3 cups(24oz) canned diced tomato
    3 oz sundried tomato in oil(chopped well)
    1 package jennie-o lean ground turkey
    1 can sliced olives
    3 Tbls balsamic vinegar
    1 jar trader joes traditional marinara(about 4.5 half cup servings)
    .25 cup red wine
    splenda, salt and pepper to taste


In oil sautee the onion, bell pepper and mushrooms(fresh and canned), olives, and vinegar. Add turkey and garlic and cook until browned. Add chopped fresh tomato, sun dried tomato, canned tomato, red wine,squash and salt,pepper and splenda to taste and cook until liquid is almost gone. Add Jarred marinara and simmer 30 minutes. meanwhile in boiling salted water cook 1 box anger hair pasta(broken into thirds for ease of eating) until al dente( about 4 minutes) drain well and toss with the sauce. This will feed 8 heartily or 10 lightly!
