Number of Servings: 6


    2 cups vegetable broth or water
    1/4 cup all-purpose flour
    3 cloves garlic, minced
    pinch of dried thyme
    1/4 teaspoon salt
    several pinches of freshly ground black pepper
    1/8 teaspoon turmeric
    3/4 cup nutritional yeast
    1 T fresh lemon juice
    1 tsp mustard (prepared, not powder)


Combine broth and flour, whisk until dissolved.
Saute garlic and oil over medium-low heat for about two minutes. Add thyme, salt, pepper and cook for a few seconds. Add the broth, turmeric, and nutritional yeast and turn heat up to medium. Whisk constantly, it should bubble in 3 or 4 minutes. Once the mixture is bubbling and thickening, stril and cook for 2 more minutes. Add the lemon and mustard. Keep warm until read to serve.
Makes about three cups. Good as a dip for veggies or nachos, pasta, etc.
