    1 lb. lean ground beef
    1/2 red or yellow onion
    3 cloves garlic, minced
    salt and pepper, to taste

    6 oz can tomato patse
    8 oz jar pace picante

    1 T oil
    7 oz. Fideo noodles or thin spaghetti, broken, uncooked


Cook first four ingredients together in a large saucepan.
Drain if needed. Mix in tomato paste, then the picante sauce. Fill empty picante sauce jar 4 times with water and stir into the mixture. Let simmer.
While that is simmering, heat oil in large skillet. Break uncooked pasta into quarters, add to oil. Turn frequently. Add browned pasta to meat mixture as it is ready, (some will brown faster).
Once all pasta has been added, the water should barely cover the entire mixture. Add more water at this time if necessary. Cover and simmer until pasta is done, about 10 minutes.
