    Mushrooms, fresh, 4.5 oz (127.5 grams)
    Yellow Peppers (bell peppers) 4.5 oz (127.5 grams)
    Egg, fresh, 6 medium
    Jarlsberg Lite Swiss Cheese, 2.25 oz


Dice up peppers and slice mushrooms while pan is heating up on medium heat. Spray pan with cooking spray and toss in the peppers and mushrooms.

While that is cooking, whisk the eggs like you would scrambled eggs in a separate bowl. If you want your vegi's to still have a crunch, throw the whisked eggs on right away. If you want your vegi's more tender, wait till the mushrooms are starting to look a little brown and cooked.

Leave the eggs right on top of the vegi's for a few minutes, then mix with spatula. At this point start breaking up your Swiss cheese over the top of the omelette and then mix it in.

Once the eggs look finished, it's good to go, or you can wait until you see the omelette browning a little.

Divide the omelette into quarters and you've got the serving size for 4 people =)
