Number of Servings: 4


    1 beaten egg
    1/4 cup V-8
    1/2 cup quick oats
    1/4 cup diced raw onion
    1/2 tsp salt
    1/2 tsp chili powder
    1/4 tsp pepper
    1 lb. lean ground beef

    1 tbsp butter
    1 tbsp flour
    1/4 tsp salt
    1/2 cup milk
    1 can Mexicorn, drained
    2 slices American cheese
    bell pepper strips


Makes 4 servings

Mix ingredients for meatloaf and bake in an uncovered 8 x 8 nonstick pan for 20 minutes.

Topping - melt butter, stir in flour and salt till smooth. Gradually add milk. Bring to boil. Stir 1 minute or till thick. Remove from heat and stir in corn and cheese. Pour over meatloaf. Top with pepper strips and bake for 20 minutes.
