Great tasting healthy soup makes it easy to get your veggies in. Tastes even better the second day! 100 calories per serving! Even the kids will eat it! Number of Servings: 15

Ingredients

    1 1b. Extra lean ground beef
    1 cup onion diced
    2 cans diced tomatoes (14 or 15 oz)
    1 cup sliced carrots
    1 cup corn
    1 cup potatoes diced (with skin)
    1 cup diced green cabbage
    1/2 cup diced celery
    1 1/2 quarts of water (add more or less depending on how "soup-y you like it")
    3-4 beef bouillon cubes
    1 bay leaf
    11/2 tsp thyme
    3 tbs basil
    Salt and pepper to taste


Directions

Brown hamburger with onion and then drain grease.
Add remaining ingredients, cover, and simmer for 1 hour or until vegetables are tender but not over cooked. (You might wait to add the celery until half way through depending if you like it soft or not.)

Makes about 15, 1 cup servings. Serve with a yummy grilled cheese sandwich and you have a perfect meal!
