    basic banana bread, reduced fat by substituting 4 oz applesauce (1/4 cup) for 1/4 cup oil. but still add walnuts and chocolate chips.


Cream banana, applesauce, oil, eggs. Blend flour, sugar, baking soda, baking powder, salt separate, then add all at once and mix as little as possible. Add nuts & chips last. Bakes 3 dozen muffins, 325 for 25 minutes.
