Ingredients

1 C half and half
1/2 C Non-fat plain yogurt
1/2 yellow onion (scored on bottom, but left whole)
3 Bay Leaves
1/2 tsp. Onion Powder
1/2 tsp Paprika
1/2 tsp Cayanne Pepper
1 1/2 Tbsp. Flour (baked in the over for 5 minutes or so, in oven proof dish or dish made of foil)
6 oz. Whole Wheat Macaroni
2 1/2 oz. Sharp Cheddar Cheese (shredded, don't use bagged though)
2 1/2 oz. Sharp White Cheddar Cheese (shredded, don't use bagged though)
2 oz. Parmesan Cheese
1 oz. Bread Crumbs
Directions
Start a pot of water and boil pasta when ready.
Combine 1/2 and 1/2, yogurt, onion (scored side down), bay leaves, onion powder, paprika, and cayanne in pot and heat slowly on a low temp. Let simmer on low temp to infuse milk/yogurt mixture.
When this has simmered for about 10-15 minutes, strain through mesh to remove onion and bay leaves. Melt butter in another pan and add flour. Whisk constantly and cook until a blonde color. Add milk/yogurt mixture immediately and whisk. Add cheese and melt into sauce.
Put cooked pasta in oven-safe dish (I prefer a large bowl that I can serve from). Pour cheese sauce over pasta and stir to mix. Top with bread crumbs and parmesan cheese, place in hot oven (350-400 degrees) until cheese and bread crumbs brown.
Let cool slightly, serve and enjoy!
