Introduction

Ingredients

    .5 cup better'n peanut butter(available ay Trader Joes)
    3 Tbls soy sauce
    3 teas sugar
    2Tbls vinegar
    2 Tbls ketchup
    2-5 Tbls orange juice***optional
    3 cloves garlic, pressed or minced finely
    3 cups cooked whole wheat spaghetti
    1 box green giant sugar snap peas no sauce
    1/2 cup carrots, sliced
    1 cup red bell pepper. sliced
    1/2 cup fresh chives or green onion, sliced
    1 cup bean sprouts
    12 oz chicken

Directions

For the sauce:
In a small sauce pan heat the peanut butter, soy sauce, sugar, vinegar, ketchup, and garlic until smooth and no lumps other then garlic. **if you need to thin the sauce a bit add orange juice in Tbls until desired consistancy is reached.

In steamer, steam the carrots until crisp tender. Add the red bell pepper and snap peas and steam additionally until carrots are tender and pepper and peas are crisp tender. Add1/2 cup chives or green onion, and sprouts-Season with salt and pepper and set aside.

Add 12 oz grilled chicken breast( you can cook your own with salt and pepper to season and slice) or use the pre cooked strips-chopped into cubes, for convenience) Just heat or cook and toss with veggies and 3 cups cooked whole wheat spaghetti and the peanut sauce. Season with fresh squeezed lime juice and hot sauce to taste.Serves 3 hearty(as in hungry man!) portions or 4 lighter ones.
