This is a great lunch salad sure to fill you up! This is a great lunch salad sure to fill you up!
Number of Servings: 1


    1 cup lettuce
    1 medium tomato
    1 oz mozzarella cheese (part skim milk)
    4 oz chicken breast
    1 tbsp Smart Balance Light Buttery Spread
    Cayenne red pepper (to taste)
    Frank's Red Hot (to taste)


1. Melt Smart Balance Buttery Spread in a frying pan. While waiting for butter to melt, season chicken with cayenne red pepper.

2. Saute chicken. Which chicken is cooking, cut tomato into wedges.

3. Put lettuce, tomato, and mozzarella cheese in a bowl.

4. Chicken breast is done when you cut it in the middle and there is no pink. When it's done, cut into small pieces, and add to bowl.

5. Garnish with Frank's Red Hot to taste.
