These are a great calorie reduced version of Greek Spinach Pie. These are a great calorie reduced version of Greek Spinach Pie.

    1 pkg (300 grams) frozen spinach, thawed
    100 grams light Feta cheese
    3 oz greek style yogurt
    3 scallions
    5 sprigs fresh dill
    1 egg white
    1/2 tsp salt
    1/4 tsp pepper
    9 sheets of phyllo dough, thawed
    non-stick spray


Preheat oven to 375*
Drain spinach and press between paper towels to remove all water. Put feta and yogurt in medium bowl and mash with fork until creamy. Add spinach, scallions, dill, egg white, salt and pepper. Stir til combined.
Keep the phyllo from drying out by putting a damp paper towel on the stack. The left over phyllo can be re-frozen. Place one sheet of phyllo on work surface, spray with non-stick spray, place another sheet on top (you can use 3 sheets if you want them a little firmer, but spray each layer). Cut the phyllo into 6 strips. Place a tablespoon of the spinach mix at the bottom of each strip. Fold a corner of the phyllo over the spinach mix, then fold it like a flag until itís a finished triangle.
Place on a cookie sheet sprayed with non-stick, and spray each triangle with non-stick so it will brown.
Bake for 20-25 minutes, until golden brown.
