Ingredients

4 (6-oz.) salmon fillets
1 onion (medium)
3 fresh garlic cloves
2 tablespoons olive oil
1 can cannellini beans (15 oz)
1/2 cup kalamata olives
1 cup grape tomatoes
2 tablespoons fresh basil
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
Sauté onion (coarsely chopped) garlic cloves (coarsely chopped) in 1 teaspoon of olive oil in a saucepan over medium heat for about 2 minutes or until slightly softened. Add beans (rinsed and drained), kalamata olives (chopped and pitted), and grape tomatoes (halved) and cook over medium heat, stirring occasionally, for about another 2 minutes or until thoroughly heated. Remove mixture from heat and stir in the basil.
Sprinkle fillets evenly with salt and pepper and cook in a large nonstick skillet with the remaining 1 teaspoon olive oil over medium-high heat for about 3 minutes on each side or until fish flakes. Spoon bean mixture evenly over salmon fillets and serve immediately.
