Ingredients

    1 cup egg whites (this recipe calculated using Lucerne Best of the Egg product)
    1 medium red onion (chopped)
    1/2 large yellow pepper (chopped into small pieces)
    1 zucchini (chopped into small pieces)
    3 cloves of garlic (grated)
    1/2 cup grated cheese
    1 tablespoon light sour cream
    3 tablespoons of grated parmesan cheese

Directions

sautee onion, garlic, pepper and zucchini.

mix egg whites with parmesan cheese and sour cream.

add egg mix to onion mix.

bake in oven 375 degrees for 30 minutes or until set and lightly browned.

serves 6.
