    1lb bag white rice, cooked according to package
    2 green onions, chopped
    1 stalk celery, chopped small
    2 cloves garlic, minced
    1 cup raw fresh spinach
    1 tablespoon canola oil
    1 teaspoon curry powder (more or less to your taste)


Serves 10.
Cook rice according to package directions. Cook celery in oil for about 5 minutes. Add garlic and green onions. Cook for a few more minutes. Add curry powder and mix well. Add spinach and cook just until leaves wilt. Stir into cooked rice, reheating if necessary.
