Ingredients

    4 Tilapia Fillets
    .25 cup lime juice
    .5 teaspoon red chilli paste
    .5 minced garlic
    2 cups diced plum tomatoes
    .5 cup dicedyellow onion
    3 tablespoons fresh chopped cilantro
    .25 teaspoon freshly ground black pepper

Directions

Serves 4
Although the fish in ceviche is technically raw, the lime juice 'cooks' it by getting rid of harmful bacteria. Consequently, it is important to soak fish for the full time indicated.

1. Soak fish in the lime juice for 4 hours in the refridgerator, then discard extra juice.

2. Combine the fish with the chilli paste, garlic, tomatoes, onion, cilantro, and black pepper. Serve cold.
