Introduction

Ingredients

    1 bunch of kale
    2 cloves of garlic, minced
    1 onion, chopped
    2 Tbsps olive oil
    1/4 cup organic currants
    2 tsps balsamic vinegar
    Salt and pepper

Directions

Wash the kale just before you chop it so that water will be clinging to it.
In a large pot, saute the onion in the olive oil. Add the garlic, then immediately the chopped kale. Cover, stirring often over medium low heat until the kale is tender, about 10 to 15 minutes. Add the currants and balsamic and taste to see if you want salt and pepper. Put in a bowl and let it sit for about 10 minutes before you serve it. Makes 6 servings as a side dish.
