    1/3 cup Yellow Cornmeal
    1/3 Parmesan Cheese, grated
    3 TBS Flour, white
    1/2 cup Milk, Fat Free, Skim
    2 large Raw Yellow Squash, sliced diagonally
    1 medium Zucchini, sliced diagonally


Heat oven to 425 F. In pie plate combine cornmeal, Parmesan cheese, and flour. Place milk in medium bowl. Dip squash and zucchini milk and allow excess to drip off. Coat with cornmeal mixture, turning to coat both sides. Place on baking sheet that is coated with olive oil cooking spray. Coat squash well with cooking spray. Bake 20 minutes, turning once or until golden brown.

* Note - If reheating leftovers, bake at 350 F for 10 minutes or until crisp and heated through.
