Introduction

This is Zucchini at it's best. I usually serve this as a side to chicken but I think it would also go good with fish. You won't be disappointed with this one! This is Zucchini at it's best. Ingredients

    2 Zucchini (lmedium/large)
    2 15 oz cans of Stewed Tomatoes
    1/2 cup of Gruyere cheese
    1 large Egg
    1 tablespoon Olive Oil
    2 Garlic Cloves
    1 cup Onion
    4 fresh Basil Leaves


Directions

Sauté the onion (diced) and garlic (diced) in olive oil until translucent. Slice and add the zucchini, stir and cook for a few more minutes. Chop the fresh basil leaves and add to the pan. Stir in the cans of stewed tomatoes along with the Gruyer cheese (shredded) and cook for an additional 5 minutes Remove mixture from the heat and mix in the egg. Place everything into a casserole dish and cook for 45 minutes at 350°..
