    3-4 pounds of fresh tomatoes
    1 large yellow onion
    9 cloves of garlic
    3 Tablespoons olive oil
    1 sprig fresh marjoram or sweet basil
    1 whole red pepper
    1 Tablespoon sugar
    salt & fresh pepper


Heat olive oil over medium-low heat in large dutch oven. Add minced garlic and chopped onion. Saute until transluscent. Add chopped tomatoes, marjoram, and whole pepper. Simmer over low heat until liquid is reduced by 25%. Cool 10 minutes and put through sieve or food mill; discard solids. Return to low heat, add salt and pepper to taste. Serve.
