    * Sweet Corn, Fresh, (off cob) 2.5 cup
    * Green Beans , 2 cup
    * Zucchini, 1 cup, sliced
    * Green Peppers (bell peppers), 1 cup, strips
    * Shallots, 2 tbsp chopped
    * Parsley, 1 tbsp
    * *Lemon Juice, 1 fl oz
    * Olive Oil, 4 tbsp
    * Salt, .1/2 tsp
    * Thyme, ground, 1 tsp


1. heat large skillet, coat pan with spray
2. Add first 4 ingredients to pan, cover and cook for 5 minutes.
3. combine shallots and all other ingredients in a small bowl and mix
4. add shallot mixture to corn mixture and toss.

Serves 6 - (2/3 cup per serving)
