    2 cups all purpose flour
    2 tsp baking soda
    1/8 tsp nutmeg
    1/2 cup sugar
    1 tsp cinnamon
    1/4 tsp salt
    1/4 cup vegetable oil
    1 tsp vanilla extract
    1/4 cup skim milk
    1/2 cup plain fat free yogurt
    2 large eggs
    1/2 cup raisins
    2 cups shredded carrots


Preheat oven to 350
Combine flour, baking soda, sugar, salt & spices in large bowl & mix. In seperate bowl, mix oil, vanilla, yogurt, milk & eggs (mix with whisk) Add liquid ingredients to dry mixture & gently stir-do not overmix. Fold in raisins & carrots. Place liners in muffin cups. Spoon batter into cups & bake until toothpick comes out clean; about 20-25 min.
