Ingredients

    1/4 cup Italian Bread Crumbs
    2 tablespoons grated Parmesan Cheese
    1 teaspoon melted butter
    1/4 teaspoon Garlic Powder
    1/4 teaspoon onion powder
    1/2 teaspoon parsley
    Pinch of Black Pepper
    1 pound Cod Fillets or other mild white fish
    1 egg beaten

Directions

Preheat oven to 400 degrees.
Mix bread crumbs, parmesan cheese, melted butter and spices together.
Cut the fillets into 4 -4 ounce servings.
Brush the fillets with egg mixture on both sides and dip into breadcrumb mixture. Place on a baling sheet coated with olive oil or Smart Balance spray.
Bake 10-12 minutes. The fish should be flakey.

    This was one of the best breadings I've ever had. My husband absolutely loved it. I used egg beaters instead of a regular egg & baked it on heavy duty foil sprayed with Pam w/olive oil in it. It turned out AMAZING! - 3/10/16
