    3 eggs
    1/2 cup Smart Balance Vegetable Oil
    1/2 cup plain, non fat yogurt
    1 cup white sugar
    2 cups grated zucchini
    2 teaspoons vanilla extract
    1 1/2 cups white flour
    1 1/2 cups whole wheat flour
    2 teaspoons cinnamon
    1 teaspoon cardamom
    1 teaspoon baking soda
    1/4 teaspoon baking powder
    1 teaspoon salt
    1/2 cup raisins


Preheat oven to 325.

Grease & flour 2 loaf pans.

In large bowl, beat eggs until frothy. Mix in oil, yogurt, and sugar. Stir in zucchini and vanilla. Combine dry ingredients & raisins. Stir into egg mixture. Divide batter between prepared pans.

Bake 60-70 minutes, or until toothpick inserted in center comes out clean.
