Ingredients

    1 box of Betty Crocker Suddenly Salad classic pasta salad mix
    3 tablespoon cold water
    2 tablespoon vegetable oil
    1 teaspoon cumin
    1 can (15 oz) Black Beans drained, rinsed
    1 can (15 oz) whole kernel corn, drained
    4 cups torn lettuce
    2 cups sour cream (can replace with guacamole dip but will change the numbers)
    1 1/2 cups of shredded Mexican cheese blend
    1 cup of cherry tomatoes
    1 can of sliced ripe olives drained
    3 cups of tortilla chips (can use nacho flavored but I used regular)

Directions

Cook pasta as directions on box.

In medium bowl, stir together seasoning mix, water, oil and cumin. Stir in pasta, beans and corn.

In glass dish layer lettuce and pasta mixture. Spread sour cream evenly over top. Sprinkle with cheese and tomatoes top with olives.

Just before serving arrange chips around edge of dish. Serve immediately or refrigerate.
