    2 Tbls. Olive Oil
    1 Cup Yellow Onion Chopped
    2 Cloves garlic minced
    2 Potato (Peeled and Diced)
    3 Cups Mushrooms (sliced)
    3 Cups Swanson 99% Fat Free Chicken Broth
    2 Cups 1% milk
    1 tsp Salt
    1/2 tsp Pepper
    2 tsp Hot Pepper Sauce


Dice onion and garlic cloves and saute in the olive oil over medium heat in a large sauce pan. Saute until tender. Peel and dice the potato and add to pot. Add the sliced mushrooms and cook until they are tender.
Add chicken broth and bring to a boil then add the milk and simmer for 20 minutes. Remove from the heat and puree in small batches in a blender. Return to pan and simmer for 10 to 15 more minutes. Serve hot with a salad.
