Introduction

My quick & healthy version of one of my favourites! My quick & healthy version of one of my favourites!
Number of Servings: 6

Ingredients

    1 lb ground turkey
    Half an onion, diced
    1-3 garlic cloves (depending on how garlicky you like it!)
    1 tbsp extra virgin olive oil
    1 can Campbell's Vegetarian Vegetable Consensed Soup
    1 can of corn, drained
    Black pepper to taste

Directions

Heat olive oil in a large pan on medium heat, add onion and garlic. Cook the garlic & onion for about 5 minutes, then add ground turkey. Add pepper to taste.
Cook for an additional 7-10 minutes to brown the turkey. Add the can of soup (do NOT add any water) and corn. Heat for an additional 5-10 minutes.

*I use an entire can of corn because I really like it, but you may only want to use half, and perhaps half of another vegetable like green beans or carrots

I use instant mashed potatoes for the topping if I am in a rush. This recipe does NOT include the nutritional value for the topping. I figure people may choose to make their own or not use any topping at all.
