A healthy and unusual way to use up some of those late summer menaces. A healthy and unusual way to use up some of those late summer menaces.
Number of Servings: 2


    1 medium sweet potato (about 1 cup grated)
    2 medium zucchini (about 1.5 cups grated)
    .25 medium onion chopped
    .25 c canned pumpkin
    .25 cup egg whites (cartoned)
    2 tsp garlic
    .5 tbsp cumin


Mix all ingredients well in a large bowl and form into 6 "patties." Place on paper towels to remove some excess moisture. Cook on skillet prepared with non-stick spray about 5 minutes per side.
Makes 2 servings, 3 pancakes each.
