Ingredients

Homemade Marinara
*4 (8 oz) cans of Hunts No Salt Added Tomato Sauce
*1 (6 oz) can of Hunts Tomato Paste
*1/4 cup Swanson's 100% fat free - 33% less sodium chicken broth
*1 tsp dried basil
2 tbsp minced garlic
1/4 cup Kraft reduced fat parmesan cheese
Cheese Mixture
*3/4 cup of Lowfat Cottage Cheese (1% milkfat)
*2 tbsp chopped chives
*1/4 cup egg beaters, egg substitute
*1-3/4 cup package of Kraft Fat Free Mozzarella Cheese (1/2 of package)
Meat Mixture
*1 pound 93% lean ground turkey
*1/2 cup chopped onion
*1/2 cup chopped green pepper
Pasta
*7 oz Barilla Whole Wheat Penne (cooked & drained)
Directions
Yeilds 8 servings
Preheat oven to 350 degrees. Spray a 13 x 9 pan with cooking spray.
As you boil your noodles begin to brown the ground turkey. During last 5 minutes, add in chopped peppers and onions. While turkey continues to cook, mix tomato sauce, tomato paste, chicken broth, parmesan cheese, basil and garlic together in a medium bowl. Drain turkey mixture and return to the frying pan, adding the marinara sauce. Reduce heat and simmer. Drain pasta.
In a bowl mix together the cottage cheese, chives, egg beaters and 1/2 of the mozzarella cheese.
In prepared 13 x 9 pan, layer 1/3 of the sauce & meat mixture, then 1/2 of pasta, and all of cheese mixture. Add into the pan, 1/3 of sauce mixture, remaining pasta and top off with the rest of sauce. Pour remaining mozzarella cheese over top and bake uncovered for 45 minutes.
